Carbohydrates

Our starch derived blend of carbohydrates is the main component of our plant-based cheeses that gives the proper structure and the best of its texture. We mainly use potato & tapioca starches.

Potato Starch

Potato starch is a starch derived from potatoes and it is naturally gluten-free. As a resistant starch, potato starch acts as a prebiotic in the body, which means that it actually feeds the good bacteria in your intestine.

Potato starch contributes to the textural proper¬ties and soft mouthfeel of our plant-based cheeses. Modified Starches show enhanced performance in different applications, like excellent melting in plant-based cheeses for pizza. Don’t worry, they are not Genetically Modified!

Tapioca Starch

Tapioca is a starch extracted from cassava root also known as yuca in some parts of the world and it is naturally gluten-free.

Tapioca starch is used to improve texture and to trap the moisture in plant based cheeses in order to enjoy the juiciest plant-based slice.

It consists of almost pure carbs and contains very little protein, fiber, or nutrients. Tapioca has a reputation as being gentle on the stomach as many people find it easier to digest than flours produced from grains or nuts.

Coconut oil

Coconut oil is an edible oil derived from the wick, meat, and milk of the coconut palm fruit. Coconut oil adds considerable amount of saturated fat and calories to the plant-based cheese while enhancing its flavor. It replaces hydrogenated fats and palm oil.

Proteins

Plant-based proteins provide an excellent source of protein considering that they will likely result in a reduction in the intake of saturated fat and cholesterol which are high in animal proteins. By adding plant proteins, our plant-based cheeses deliver creamier textures and mouthfeel.

Pea protein

Pea protein is a supplement extracted by yellow peas. Research demonstrates that pea protein, due to its high fiber content, is one of the more easily digested plant-based proteins. Pea protein contains all nine essential amino acids that your body cannot create and must get from food. It’s relatively low in methionine but is rich in iron and contains high levels of folate.

Potato protein is extracted by potatoes and is natural allergen free. Thank to a well-balanced amino acid profile, potato proteins have a high biological value close to animal proteins.
Meanwhile, potatoes exceed the recommended levels of the indispensable amino acids, lysine, methionine, threonine, and tryptophan, demonstrating that potato protein is of high quality.
